It could not be otherwise for their restaurant located near the small village of Saint-Bonnet-le-Froid, capital of the Mushroom, where Gilles officiated in the kitchen with Régis Marcon (3 stars in the Michelin Guide).
According to the seasons, he transforms the beautiful produce of the Altiligerian region into delicious dishes. Quality, authenticity and confidence are the values he shares with his producers.
